There are a wealth of recipes which involve honey as an ingredient due to its distinctive sweet taste. It can be substituted on most occasions for sugar although is not usually recommended as a substitute for sugar when baking, as resulting cakes will have a dense texture.

Honey Biscuits
1 tablespoon of honey
10oz plain flour
4oz sugar
2 oz butter
2 eggs
Rub the butter into the flour and sugar. Add the eggs and knead into dough. Roll out very thinly, and cut into biscuit shape rounds. Brush the rounds with liquid honey and bake on a greased sheet in a pre-heated oven at 180°C/375°F for about 10 minutes. Let the biscuits cool on a wire rack.

Honeyed Lamb
5lb leg of lamb
4 tablespoons of honey
1 teaspoon chopped fresh ginger
1/2pt cider
1 large sprig of rosemary
salt and pepper
Place the lamb on a sheet of foil in a baking tray. Rub it all over with the salt, pepper and chopped ginger and sprinkle with the crushed sprig of rosemary.
Spoon the honey and cider over the lamb, and then make a parcel around it with the foil which should be completely sealed. Place in a pre-heated oven at 180°C/375°F and cook for about two hours, turning up the heat and opening back the foil for the last 30 minutes. The juices can be used to make the gravy in this traditional Welsh recipe.

Raspberry Sauce
12oz raspberries
2 tablespoons clear honey
2 tablespoons of lemon juice
Sieve the raspberries and stir in the lemon juice and honey. Serve as a sauce for ice cream, yoghurt or fresh fruit.
